New Chef Joins The View Grill

The View Grill has announced chef James Lotker, Glen Cove resident and former executive chef of The Metropolitan will be joining chef Jeanine DiMenna in the kitchen three days a week. The two will be collaborating on creative cuisine and new and exciting theme nights.
Lotker received his formal training at the Culinary Institute of America, located in Hyde Park, NY. After completing the two-year program, he was hired by The Club Corporation of America located in Houston, where he spent three years stationed at its University Club Galleria Plaza and the Mustang Club which he opened in Corpus Christi, TX.

In 1980, Lotker returned to his native Long Island. He spent four years as sous chef at Pine Hollow Country Club and three years as executive chef at the Rockville Centre Links Country Club. In 1987, Lotker found his home at the Metropolitan where he spent 30 years as working chef and executive chef.

Throughout the decades, Lotker enjoyed watching brides and grooms return for their children’s christenings, vow renewals and other milestone events. He knew as a child that cooking was his calling and fondly reflects on the time he spent in the kitchen with his mother at their Port Washington home. Although she was not a professional chef, he credits her as being a tremendous influence. He looks forward to working with DiMenna.

“She’s got unbelievable creativity,” Lotker said. Collectively, the two chefs have about 80 years experience in both catering and ala carte dining.

It is their hope to expand on catering events such as wedding rehearsal dinners, holiday parties and other events. Together they are working on some very exciting theme nights for example, Tapas Night, An Evening in Roma, April in Paris and evenings that will focus on regional American food that will include, Texas Brisket, Great Lakes white fish, Louisiana crab gumbo and more.

Lotker proudly boasts he makes the best Matzo Ball soup.

“I am really excited to have James here, we are from the same culinary generation and not only will we continue with the classics, but we are going to cook up some delicious modern twists as well,” DiMenna said.
